We need to build our own app that integrates with hardwares like EAS and send/receive data from the device. Is it possible for us to use Tuya SDK to integrate with the hardware and send and receive data that can be stored with timestamps on our servers?

The Tuya SDK and device communication are both based on device access to the Tuya Cloud. You can develop products on the Tuya IoT platform (https://iot.tuya.com/) and purchase the authorization code or firmware for the product. After integrating with EAS, the EAS device can access the Tuya Cloud and use the Tuya SDK for control and operation.
